Programs & Courses

Human and Social Services - CA006
This course is designed for the student who is seeking to become a lawyer, teacher, social worker, police officer, firefighter, or cosmetologist. The student will need skills to work effectively with other people. This course includes class activities, projects, and speakers in the areas of safety and law, social services, education, child care, recreational services, and personal services.

LAW AND PUBLIC SAFETY

Civil/Criminal Law - SS450
This class will introduce students to the basic concepts that form our civil and criminal judicial systems. Special emphasis will be placed on individual rights and knowl¬edge of laws in daily life.

Criminal Justice - SS462
This course is designed to provide an overview of the justice process and the criminal justice system in general. Concepts of crime, deviance and justice will be discussed and general theories of criminal activity will be covered. Individual rights in a democratic society will be explored, as will the legal definitions of various crimes.

Law Enforcement - TI080
This course prepares students to apply advanced academic and technical knowledge and skills to a variety of settings within law enforcement. Students will be exposed to all aspects of law enforcement. A partnership with a local police department will provide the opportunity for students to shadow local law enforcement officers. Participation in the Police Explorer program is encouraged. Students will be subjected to a background check and fingerprinting as a part of this course.

Forensics - SC337
This course is designed to provide the skills and background to apply the principles of Forensic Science. The students will learn how to lift fingerprints, footprints and collect other evidence. They will also learn about DNA and the rudiments of fiber, hair, and other trace analysis. Students will participate in mock crime scene investigations. Experts in the field will be invited to speak to the class.

EARLY CHILDHOOD EDUCATION

Child Development - TI070
This course is for students who enjoy working with children and want to learn how children grow and develop. Students will learn about the needs of children at various ages. This will be accomplished through class activities, working in lab settings with infants, toddlers, preschoolers and special needs children in the Child Development Center. This will be complemented by participation in FCCLA (Family Career and Community Leaders of America) club activities.

Teaching Young Children - TI072
This course is for students who enjoy working with children and want to develop skills needed for a career in early childhood. Students work as volunteer assistants in the Child Development Center. This advanced child development course includes many opportunities including earning infant and child first aid and CPR Certification and specialized training from Early Childhood Education specialists. The experience and hours earned in this class will provide the first steps toward an industry certificate in early childhood.

Early Childhood Education - TI074
Students will build on the knowledge gained in Child Development. They will continue the journey to become teaching assistants in Early Childhood classrooms. They will prepare weekly lessons, gain experience teaching infants, toddlers and preschoolers, and special needs children. They will exit with an Early Childhood portfolio to be used to obtain employment. Participation in FCCLA will continue and will complement these goals.

EDUCATION PROFESSIONS

Teacher Cadet 1 - TI075
This course is an elective designed to give insight and experience to students who are interested in careers in the field of education. Units emphasize communication skills as well as knowledge of the learner, the teacher and the school. Students practice these skills by spending a minimum of 25 hours in an on-going field experience at an elementary school. Students enrolled in the Teacher Cadet program will participate and be affiliated with the national organization, Future Educators of America.

Teacher Cadet 2 - TI076
This course is an elective that continues to prepare students to work in the field of education enabling them to investigate the profession on a deeper level. Units emphasize communication skills, classroom responsibilities, educational issues and professional development. Students will develop these skills by completing 25 hours of field experience in local elementary schools. Lesson planning, teaching methods and classroom management skills are emphasized throughout. Dual credit may be obtained from the Maricopa County Community College system for this program. Students participating in Teacher Cadet will be members of, and affiliated with, the national organization, Future Educators of America.

FIRE SCIENCE

Fire Science - TI081
This course will review the history and evaluation of a fire department organization. The role of the fire service in the community will be examined, as well as responsibilities of the fire administrator, including organization. Departmental functions, interdepartmental relationships, management of buildings and equipment and techniques of firefighting will also be covered. The course will also explore topics such as emergency medical services and fire prevention.

Fire Control and Suppression - TI082
This course includes field trips, lectures, demonstrations and physical training. Classroom/lab activities and instruction include fire hydraulics, apparatus, CPR, emergency response, low/steep/high angle rescue, trench rescue, swift water rescue, confined space rescue, water supply, fire streams, fire control, automatic sprinklers, salvage and overhaul, building construction, fire cause and origin, command procedures, SOPs, dispatch, prevention, public education and firefighter safety.

CULINARY ARTS

Food Science - TI090
This is a basic course in the study of food preparation and nutrition. Principles of food preparation, food safety and the use of equipment are examined along with guidelines for making healthy choices, food selection and storage, and the preparation of a variety of foods. Food laboratory experiences emphasize teamwork and job success. Students may experience applications supporting Arizona Math Standards.

Creative Foods - TI091
Following the rudimentary introduction to foods and nutrition covered in Food Science, this course focuses on the specific food preparation and presentation techniques. Students will learn to prepare baked goods and pastries, which include yeast breads and quick breads, pies and cakes, vegetables, meats and dairy products. Students are exposed to curriculum written by the National Restaurant Association. This program covers the safety and sanitation issues and procedures used by the food service industry. This course is designed for students who have a real interest in food preparation.

Culinary - TI092
Students learn operational procedures and professional skills used in the food service industry. Industry professionals designed the curriculum used in this course. Basic culinary skills taught include knives skills, Garde Manger, front and back of the house operations, professional cooking techniques, and plate presentation. Students will be expected to participate in statewide competitions and Careers through Culinary Arts Program (C-CAP).

Culinary Operations - TI093
Students expand on professional skills used in the food service industry. In depth culinary skills taught include Garde Manger, Saucier, front- and back-of-the-house operations, cost vs. profit, as well as, restaurant and kitchen management in the fine dining environment. While enrolled in this course, students are encouraged to be active members of Family Career and Community Leaders of America (FCCLA).
